According to the Lonely Planet, L'As de Felafel is the number one place to eat in Paris and ranked as number 13 amongst all the activities to do in Paris, you can read the review here.
This falafel place is located in Marais, the Jewish quarters of Paris, and it was very busy on the Sunday afternoon that we went down there. The wait for a falafel was about 30 min, but it was definitely worth waiting for as it was one of the best falafels I've had outside of Israel and the Middle East.
